Learn How to Make Ina Garten's Famous Engagement Roast Chicken - Here's the Recipe!

Ingredients:

- 1 (four to five pound) roasting chicken
- Kosher salt & freshly ground black pepper
- 2 lemons
- 1 whole head of garlic, cut in half crosswise
- Good olive oil
- 2 Spanish onions, peeled and thickly sliced
- 1/2 cup of dry white wine
- 1/2 cup chicken stock
- 1 tablespoon of all-purpose flour

Step One:

Preheat your oven to 425 degrees Fahrenheit.

Step Two:

Remove and discard the chicken giblets. Pat the outside of the chicken drive. Generously salt and pepper inside of the chicken. Cut the lemons into quarters, place two quarters of lemons and the garlic inside of the chicken.

Brush the outside of the chicken with olive oil and generously sprinkle the chicken with salt and pepper.

Step Three:

Tie the chicken legs together with kitchen string and tuck the wings under the body of the chicken.

Place the chicken into a 11 by 14-inch roasting pan.

Place the two extra lemon quarters and sliced onions in a large bowl, and toss with 2 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 a teaspoon of pepper. Stir everything together.

Pour the mixture around the chicken in the pan.

Step Four:

Put the pan of chicken into the oven and let it roast for about 1 hour and 15 minutes, until the juices run clear when you cut between a leg and thigh.

Step Five:

Once the juices run clear, remove the chicken from the pan (leaving in the onions and lemons), place it on a platter, cover with aluminum foil, and let it rest for 10 minutes.

Step Six:

Place the pan with the onions and lemons on top of the stove and turn the heat to medium-high. Add the white wine and stir with a wooden spoon to scrape the brown pits from the bottom of the pan.

Add the chicken stock and sprinkle on the flour, stirring constantly for a minute until the sauce thickens.

Step Seven:

Carve the chicken onto a platter and serve with the lemons, onions, and sauce. Enjoy!
